Chef Manuel introduced the first "authentic" Mexican food products to the Canadian Market place La Costeña as well as L.A. Cetto Wines from Baja California in 1993. Chef Manuel organized the first Chef's Trade Mission in October 2001 to visit Chefs in Mexico City for having a Culinary exchange with their Mexican counterparts. Took 5 Chefs & 5 Canadian media personalities to write about the trip. In October 2002 he travelled with 7 top Canadian Chefs, including Marcus Von Albrecht, Chris Mills, Romay Passat, Andrew Court, Blair Codling. In 2003 he travelled with 2 Canadian Chefs to Puerto Vallarta to the International Culinary Festival. He prepared & cooked with his counterparts a Canadian menu for 2 weeks at Westin Regina Hotel. |
